Easy Satay Sauce

Serves: 6


· 1 tsp sesame oil

· 1-2 tsp garlic

· 1 heaped Tbsp Thai red curry paste

· 1 and 1/2 Tbsp soy sauce

· ¾ cup peanut butter

· 4 Tbsp brown sugar

· ½ tsp cayenne pepper

· 2 Tbsp apple cider vinegar

· 1/2 tsp salt

· 400g can coconut milk

· juice of one lime


Heat sesame oil in pan and gently fry garlic and curry paste.

Add remaining ingredients except for coconut milk and lime juice, increase heat, and stir well to combine.

Add coconut milk and half the lime juice. Taste. Add remaining lime juice if necessary.

Serve over chicken and rice, with vegetables on the side.
